Default Updating Multiple Records from User Input

A defined query returns n records, each representing an invoice that has not been paid. This is from a field, Paid, that carries a 'Y' or 'N' character.

I am unsure what would be the most efficient way to update anywhere from none to all of these records.

I will likely add either a radio button, check box, or drop down menu to change the option on the Paid flag for each record, but how can I set the Update to deal with multiple records, instead of updating record by record?
