Default SQL Server hogs CPU Usage

Before we launched our site to the public, we did some pretty heavy duty load testing on database driven pages, and our results were great. With 200 users on the site hitting pages every 2 seconds, our CPU usage never went over 50%. Now that we are in production and real clients are hitting our box, I see the CPU usage jumping to 100% all the time. It goes up and down and up and down like crazy, sometimes staying at 100% for up to 7 seconds. Not good. Needless to say, I get the occasional users who complain about script timeouts.

Has anyone had a similar problem? Have any ideas for me to try?

TIA

Plus, do you have any idea as to whether the size of the database during testing accurately represented the size in production?

I'd look at your most common queries and make sure they aren't
doing full table scans by viewing them in SQL Query Analyzer.
